ove a frozen turkey to the fridge by the date for its weight: a 12–16 lb bird by Sunday 22 November, a 16–20 lb bird by Saturday 21 November, and a 20–24 lb bird by Friday 20 November 2026.** The USDA's rule is about one day in the fridge for every 4 to 5 pounds, and the fridge is the method it prefers. The rest of this page is a week-by-week timeline so Thanksgiving Day is cooking, not panicking.
Step one: the turkey thaw date
USDA thawing times in the refrigerator (at 40°F / 4°C or below), with the latest start date for Thanksgiving on Thursday 26 November 2026:
| Turkey weight | Days in the fridge | Move it to the fridge by |
|---|---|---|
| 4–12 lb | 1–3 days | Mon 23 Nov |
| 12–16 lb | 3–4 days | Sun 22 Nov |
| 16–20 lb | 4–5 days | Sat 21 Nov |
| 20–24 lb | 5–6 days | Fri 20 Nov |
How the dates were worked out: Thursday 26 November minus the upper end of each range (3, 4, 5 or 6 days).
Three more USDA rules worth knowing (via University of Nebraska–Lincoln Extension):
- A thawed turkey keeps 1–2 days in the fridge — so starting a little early is fine.
- Forgot? The cold-water method takes about 30 minutes per pound (6–8 hours for a 12–16 lb turkey). Keep it sealed, fully under cold water, change the water every 30 minutes, and cook it straight away.
- Never thaw on the counter, in the garage or on the porch. Food left at room temperature for more than 2 hours enters the 40–140°F zone where bacteria multiply quickly.
- Still frozen on Thursday? You can cook a turkey from frozen; it takes at least 50% longer.
Put the turkey on a tray in its wrapper on the bottom shelf so any drips can't reach other food.
The week-by-week timeline
3 weeks out (week of 2 November)
- Decide the menu and how many people you're feeding.
- Buy or order the turkey. Check its weight and write the thaw date from the table above in your calendar.
- Clear freezer and fridge space — you'll need a whole shelf for the turkey later.
2 weeks out (week of 9 November)
- Shop for everything that keeps: tins, stock, flour, spices, frozen vegetables, foil, containers.
- Make a cooking schedule for Thursday: what goes in the oven when, and at what temperature.
- If guests are bringing dishes, confirm who's bringing what.
1 week out (week of 16 November)
- Turkey to the fridge on its date (Fri 20 to Mon 23 November, depending on weight).
- Make your shopping list for fresh food and do the main shop at the weekend.
- Prepare the containers and labels for leftovers — this makes Thursday night's pack-down fast.
Monday 23 – Wednesday 25 November: make-ahead days
FoodSafety.gov's guidance is that cooked leftovers keep 3–4 days in the fridge. So anything you cook ahead and store should be made no earlier than Monday 23 November, which keeps it inside that window on Thursday.
- Monday: wash and chop sturdy vegetables (carrots, celery, onions) and store them sealed in the fridge.
- Tuesday: make sauces and dressings; dry bread cubes for stuffing.
- Wednesday: assemble dishes that will be baked on Thursday; set the table; check the turkey is thawing (it should feel soft when pressed).
Thursday 26 November: cooking day
- Take the timeline you wrote two weeks ago and follow it.
- Cook the turkey to 165°F (74°C), checked with a food thermometer in the thickest part.
- After dinner, get leftovers into the fridge within 2 hours, in shallow containers.
The make-ahead mindset (why this helps)
For a busy woman, Thanksgiving stress is mostly decisions in the moment: what's next, is it thawed, where's the dish. Moving every decision into the weeks before turns Thursday into a checklist. It's the same principle as weekly meal prep, applied to one big meal.

FAQ
When should I take my turkey out of the freezer for Thanksgiving 2026?
Using the USDA guideline of one day in the fridge per 4–5 pounds, move it to the fridge by Monday 23 November for a 4–12 lb bird, Sunday 22 for 12–16 lb, Saturday 21 for 16–20 lb, or Friday 20 for 20–24 lb. A thawed turkey keeps 1–2 days in the fridge, so a day early is fine.
How long does it take to thaw a turkey in the fridge?
About one day for every 4 to 5 pounds, according to USDA guidance: 1–3 days for 4–12 lb, 3–4 days for 12–16 lb, 4–5 days for 16–20 lb, and 5–6 days for 20–24 lb. Keep the fridge at 40°F (4°C) or below and the turkey on a tray on the bottom shelf.
What if I forgot to thaw my turkey?
Use the cold-water method: seal the turkey in a leak-proof bag, submerge it in cold water, change the water every 30 minutes, and allow about 30 minutes per pound. Cook it immediately afterwards. You can also cook a turkey from frozen; it takes at least 50% longer.
Can I thaw a turkey on the counter?
No. The USDA advises against thawing on the counter, in the garage or on a porch. Food at room temperature for more than 2 hours enters the 40–140°F range where bacteria multiply quickly.
How far ahead can I cook Thanksgiving side dishes?
FoodSafety.gov says cooked food keeps 3–4 days in the fridge, so for a Thursday meal, cook make-ahead dishes no earlier than Monday. Health & Fitness with Ella's timeline uses Monday to Wednesday for chopping, sauces and assembling, with baking on Thursday.
What temperature should turkey be cooked to?
165°F (74°C), checked with a food thermometer in the thickest part of the bird. The same temperature applies when you reheat leftovers.
This is general food-safety information. Always follow the instructions on your turkey's packaging.
